Why it works
Some cheeses taste like dessert already. Aged Gouda has caramel and butterscotch notes and little crunchy crystals, Gorgonzola dolce is the sweet, mild blue, and mascarpone is basically a dessert cream. Brie in the middle takes on whatever sweet thing it touches.
Honeycomb is the centerpiece, and dark chocolate, dates and figs give the cheeses partners. A little prosciutto, salted almonds and a pinch of flaky salt stop it from being all sugar, which is what makes you keep eating.

Questions
What cheese goes with chocolate?
Aged Gouda is the easiest match because of its caramel notes. Brie, mascarpone and a sweet blue like Gorgonzola dolce also work with dark chocolate.
Can you serve a cheese board as dessert?
Yes. It's standard in France. Pick cheeses with sweet notes and add honeycomb, fruit and chocolate.
What wine goes with a dessert cheese board?
Port, late-harvest white or a sweet sparkling wine like Moscato d'Asti.
