Why it works

Two Northwest cheddars, Oregon's Tillamook and Seattle's Beecher's Flagship, make the cheese course, with a local chèvre for contrast. Wild smoked salmon and a smoked crab dip bring the coast.

Oregon's Willamette Valley grows almost all of America's hazelnuts, so they're here roasted and in the honey. Marionberries, Pinot Noir jam and sourdough finish the regional story.

Timeline

  1. T–30 minTake out the cheeses; keep the salmon and crab dip cold.
  2. T–20 minSlice the apples and sourdough; fill the small bowls.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

What foods are from the Pacific Northwest?

Wild salmon, Dungeness crab, hazelnuts, marionberries and other berries, apples, Tillamook and Beecher's cheeses and Willamette Valley Pinot Noir.

Can I swap the regional cheeses?

Yes. Any aged white cheddar works for Tillamook or Beecher's, and blackberries work for marionberries.

What wine goes with this board?

Oregon Pinot Noir. It's light enough for salmon and has the fruit for the berries and jam.
