Why it works
Without bread, texture does the work crackers usually do. Sharp, crumbly cheddar, mellow Gouda and soft brie give three different bites, and parmesan crisps, cucumber rounds and celery give you the crunch.
Salami, pepperoni and prosciutto are close to zero carbs, so the carbs on this board come from the almonds, raspberries and vegetables. Olives, pickles and whole-grain mustard bring the acidity that keeps rich food from tasting heavy. About 8 g net carbs per serving.
Timeline
- T–60 minTake the cheddar and gouda out of the fridge.
- T–30 minTake out the brie. Slice the cucumbers and celery; fill the small bowls.
- + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.
Questions
Is charcuterie keto-friendly?
Mostly. Hard and soft cheeses and cured meats are very low in carbs. The carbs come from crackers, bread, jams, honey and most fruit, which is why this board uses vegetables, parmesan crisps and berries instead.
What do you use instead of crackers on a keto board?
Cucumber rounds, celery, endive leaves, parmesan or cheddar crisps and pork rinds all work.
How many carbs are in this board?
About 8 g net carbs per serving, when shared by 8 people. The book lists the net carbs of every item.
