Why it works

Every rose is made the same way, with a small glass, so 50 roses is just repetition. Dark salami or soppressata roses, pink prosciutto and pale mortadella give three shades.

Strawberries, raspberries, brie and goat cheese fill the rest of the heart. It's made for Valentine's Day, Galentine's, anniversaries and bridal showers.

Timeline

  1. Day beforeRoll all the salami roses (keep them covered on a sheet pan in the fridge), and slice the cheeses.
  2. 2 hours beforeHull and halve the strawberries and pat the berries dry.
  3. + 2 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

How do you make meat roses with a glass?

Layer overlapping slices of salami around the rim of a small glass, then flip it out. The book shows the exact method and how many slices each rose takes.

How long does it take?

About 90 minutes, mostly making roses. It's rated 2 of 5 because it just takes patience.

Can I make it ahead?

Make the roses the day before and keep them covered in the fridge. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
