Build it exactly, with the book

This board is in Charcuterie Lab: Impossible Boards, with 24 more showpiece boards. The book has the full shopping list, the layout, all eight build steps with the trick that makes the shape work, and easy, budget and luxe versions.

Why it works

There's no bottle. The shape is folded Genoa salami laid straight on black slate and filled in like a coloring book with cucumbers, green grapes and olives. An oval cut from a wheel of brie becomes the label, and thin aged Gouda brushed with edible gold makes the foil neck.

Bubbles burst out of the top, and prosciutto, soppressata, bresaola and white cheddar fill the slate around it. It's the board for New Year's Eve, an engagement or any celebration with a toast.

Timeline

  1. Day beforeCut the cheddar cubes, slice the cucumber and cut the brie oval. Store each separately, covered.
  2. 2 hours beforeBrush the Gouda "foil" and toss the almonds in gold luster.

Questions

How do you make a champagne bottle board?

Outline the bottle in folded salami on a black slate, fill it with cucumbers, grapes and olives, cut the label from a wheel of brie and make the gold neck from thin Gouda. The book has the full layout and steps.

Is it hard?

No. It's rated 2 of 5 and takes about 75 minutes.

Can I make it ahead?

Cut the cheese and wash the grapes the day before. Build it within 2 hours of midnight. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
