Why it works

Japanese cooking is built around umami, and this board is too: smoked salmon or ikura, teriyaki jerky, miso honey and soy-glazed nuts all bring savory depth. Brie and cream cheese give that depth something soft and mild to sit on.

Fuyu persimmon or Asian pear, cucumber and pickled ginger keep it fresh, and nori, rice crackers and sesame flatbread replace the usual crackers. Keep it sparse: a Japanese-style board looks best with space around each item.

Timeline

  1. T–30 minTake out the cheeses; mix the miso honey.
  2. T–20 minSlice the persimmon and cucumber; cut the nori.
  3. + 3 more stepsThe rest of the timeline and the step-by-step placement are in the full plan.

Questions

What is miso honey?

Equal parts white miso and honey stirred together. It's sweet, salty and savory, and wonderful on brie.

Where do I find wagyu charcuterie?

Some specialty shops sell wagyu bresaola or salami. Regular bresaola is a good swap.

What drinks go with it?

Sake, a crisp Japanese lager, a dry Riesling or green tea.
