Build it exactly, with the book

This board is in Charcuterie Lab: Impossible Boards, with 24 more showpiece boards. The book has the full shopping list, the layout, all eight build steps with the trick that makes the shape work, and easy, budget and luxe versions.

Why it works

The walls are cheese bricks set with cream cheese mortar on a hidden box, so they stand up straight instead of sliding. Four whole salami chubs make the towers, topped with prosciutto roofs.

Inside the walls, a brie courtyard, and around them cubes of Gouda, salami and fruit feed the guests. It's rated 5 of 5, the hardest board in the book and the most fun, and it's the one people will photograph.

Questions

How do you make a cheese castle?

Stack cheddar bricks with cream cheese mortar around a hidden box so the walls stand straight, then add whole salami chubs as towers. The book has the step-by-step build.

How long does it take?

About 2½ hours of active time. It's the most complex board in the book.

Can I make it ahead?

Cut the cheese bricks the day before and keep them wrapped. Build the castle on the day. Keep meat, cheese and cut fruit out no more than 2 hours, or 1 hour above 90°F. For a long party, build half, keep the refill in the fridge and top it up halfway through.
